Candied Rosemary Balsamic Walnuts

I just got off the phone with my grandma, who turned 80-years old. She doesn’t look much over 50-years young. Naturally, I enjoy her life-advice. 

Voluntarily she described her lunch: A salmon sandwich, hard boiled egg, and a glass of wine. “A good lunch for when you are tired”, she ensured. 

Then we had a laugh about how trendy it is to be healthy.

“What happened to beer or wine, and cigarettes as trendy?”, we laughed. 

Ironically, I was playing chef–reinventing a candied walnuts recipe… to a “healthier” version, while chatting with her. 

Typically these babies are all butter + sugar. Who doesn’t love these things? 

My intention was: less dairy, more coconut sugar, and still delicious. Why not? 


Candied Rosemary Balsamic Walnuts

Ingredients: 

2tbsp Earth Balance 

1/2 cup of coconut sugar

2 cups of Walnuts

1 tbsp of chopped rosemary 

Pinch of Himalayan salt 

How to make it: 

Preheat oven to 350. 

In a pot, melt Earth Balance, add sugar, mix/melt for 3-4 minutes. Stir in rosemary and walnuts.

Spread on a greased parchment paper, covered pan. Sprinkle with Himalayan salt. Bake for 10-15. 

Remove from oven, spread mixture on a separate parchment paper, (lightly greased) pan. Let cool. 

Enjoy! It’s darn good! 

Try it with a glass of wine? I must say, I do like wine with lunch. Grandma does know best.
