Fennel Salad

Yield: 2 servings | Prep time: 10 minutes

  • 2 fennel bulbs
  • 1 grapefruit
  • 2 Tbsp. olive oil
  • 2 Tbsp. fresh dill
  • 3 Tbsp. pine nuts
  • Pinch of salt
  1. Chop up fennel (remove shoots).
  2. Peel and slice the grapefruit. Removing the skin opens up the flavor, but is not necessary.
  3. Chop dill.
  4. Toss all ingredients together and let sit for 20 minutes before serving.

Fennel is high in fibre, so this is an excellent dish if things are a little sluggish with the digestive system. The citrus is great for the immune system and skin.
