Vegan Quesadillas 

Making yourself dinner is the most romantic thing you can do. Think of it this way, and you will never slave in the kitchen again!

Tonight I got spicy in the kitchen.

Salsa, guacamole & vegan cashew cream cheese.

I like vegan cheese, it’s healthy. Dairy cheese, not so much…

I was inspired by Jessica Milan’s, lookbook cookbook. 


Because who doesn’t love yummy, simple, healthy recipes.

The Veggie Quesadilla and Fiesta Layer Dip look delicious.

Inspired , I decided to make a stuffed Quesadilla .

Stuffed Mexi Quesadilla

Salsa Fresco: 

2 small tomatoes, chopped

1/2 orange, bell pepper, chopped

1/2 small, white onion, chopped

1 tsp jalapeño, chopped

1/4 lime, juiced

1/4 bunch of cilantro, chopped

A pinch of garlic powder and Himalayan  salt.

Feel free to add or subtract from those measurements according to how you like your salsa flavoured.

Guacamole: 

(I used the same recipe for the guacamole as I did for the salsa fresco.)

Two modifications:

4 avocados, pitted

Option:  remove tomato and  bell pepper

Cashew Cream: 

1 cup of organic cashews

1 tbsp almond butter

1 cup filtered h2O

1/4 lemon, juiced

Pinch of Himalayan salt.

Blend until smooth.

Blended Beans: 

3/4 can, organic black beans

1 tbsp of cashew cream

Pinch of Himalayan salt.

Spiced Veg: 

1 small potato, chopped

1/2  small, white onion, chopped

1/2 bell pepper, chopped

1/4 can, black beans

Mexican Spice Pack: 1/2 tsp chilli spice, 1/2 tsp of garlic powder, pinch of Himalayan salt.

On medium heat, sauté onions with a little coconut oil, until light brown. Add potato, cook for 5 minutes,  add bell pepper, black beans, and spices. Cook 10 minutes.

I encourage you to try things while cooking, timing may vary slightly.

I grilled a tortilla shell, and layered everything inside the shell. I had some smoked tofu, so I added thick slices of that as well.

Great texture. Great flavour.


By all means, don’t follow what I did, make your own dish. These flavours work well together–whatever you decide.
