- 2 fennel bulbs
- 1 grapefruit
- 2 Tbsp. olive oil
- 2 Tbsp. fresh dill
- 3 Tbsp. pine nuts
- Pinch of salt
- Chop up fennel (remove shoots).
- Peel and slice the grapefruit. Removing the skin opens up the flavor, but is not necessary.
- Chop dill.
- Toss all ingredients together and let sit for 20 minutes before serving.
Fennel is high in fibre, so this is an excellent dish if things are a little sluggish with the digestive system. The citrus is great for the immune system and skin.
